This was a recipe I adapted from a trip to Cabo San Lucas where the waiter made our guacamole right at the table. It tastes best with ocean air, but is pretty good with chips too!
3 ripe avocados, Salt, Pepper, Garlic (powder or fresh-1 clove), Cayenne pepper, 1 lime, Olive oil
Instructions: In a medium bowl, add a pinch of salt, pepper, and garlic powder. Add a TBSP of olive oil and the juice from 1 lime. Mix around with a fork to dissolve the salt. Add the avocados and mash with fork or potato masher to desired consistency. Add pinch of cayenne to desired heat and stir. If you like a chunkier guacamole, add some pico de Gallo at the end. Enjoy with chips or crunchy veggies, think Carrots, Turnips or Radishes!
Why I like it:
Avocados are a great source of omega 3 fats which have anti-inflammatory properties and are often in short supply in the modern American diet. Omega-3’s help with cell membrane flexibility (we want this) and can promote healthier levels of triglycerides and HDL cholesterol!
